If I had carte blanche (won't happen):
Thor is worthy, Mjolnir is the weapon. No more living mjolnir. Leave the cursed weapon/hidden storm angle for other characters and creatures he encounters.
basic powers are all back, plus more stunts to be seen on a recurring basis. Birth mom is Gaea.
Don Blake is back. And not a maniac. Working with an NGO in different global settings. (I liked that initial setup in the JMS era, but that was abandoned after the first arc).
Odin is not a raving reactionary, but not santa claus, either. Frigga's more prominent.
The series can alternate between Earth based action, and other-world based action. (Asgard, other planets, dimensions).
Loki is untrustworthy. But not 100% maniacal in all contexts.
(sidebar: i dislike the trend now of pushing Loki into the "antihero" zone to the point where he now can't do anything horrible, or if he does it's more of an "oh well" thing rather than "Thor, beat his @$$!!" And considering the popularity of movie Loki as well as Loki has been retconned into having a queer connotation, then for some it's considered questionable to have him be outright "evil" since that would be considered trafficking in stereotypes.. Creatively it's painting into a corner, alas..
Introduce more villains, more mythological creatures, more sci-fi based threats.
