When he had Annie he didn't quit he was still Spider-Man and did what he did before. He quit being Spider-Man after he lost his leg in MC2 and even then still suited up when he could and another example was in Dark Ages. He had a Mayday and WAS STILL SPIDER-MAN

Peter is defined by “with great power there must also come great responsibility.”
If his children have great power, of course he would teach them the same. Not sure you why think that would even be a question.
Also, “Peter raising a legacy character” is clearly meant as a meta comment on what story possibilities May’s death would have opened up. Stories need conflict. So Peter feeling conflicted over his children following in his footsteps (as he was in Spider-Girl and RYV) would indeed open up storytelling opportunities.

Killing Aunt May off wouln't open the possibility for him to have children. Those are two completely separate subjects and Peter having kids is really not something likely to happen whether they leave May alive or dead, at least, not in the present. That's a situation for possible future stories, where they can easily skip five or ten years ahead.
That explains why he's been a member of the Avengers, Fantastic Four, New Warriors (sort of), worked with Silver Sable, taught a group of X-men, and probabaly was in a few other groups I'm forgetting.
