Sorry for the shorthand.

I think Kathleen Kennedy or somebody else involved said something to the effect that the story arc planned for Rangers of the New Republic would instead be used for Mandalorian Season 3. Makes me wonder if the Grogu/Mandalorian reunion, which we got earlier than expected in Book of Boba Fett, and other stuff involving the Mandalorian (His adventures on the ringed space colony, for example) were intended for season 3 but were 'moved' into Boba Fett to make room for Mandalorian season 3's New Republic plot, which presumabely would deal with whatever Gideon's was up to with the cloning or whatever genetic engineering thing. That as well as the other

It's not like this has never happened before in Star Wars-originally 6-9 would presumably spread out further adventures of Luke and co. until the final battle with the Emperor in 9 (We did of course get a final battle with the Emperor in 9 anyway, strangely enough). However, instead Lucas decided to compress all that into one movie-ROTJ (Possibly because of factors at the time such as his marriage troubles and all his other productions which meant he didn't really have time for SW).

EU-wise, The New Jedi Order novels were based on a Dark Horse crossover that never happened although one that was built up (In the Crimson Empire comics)....and of course, since it's cancellation, level 1313 of Coruscant has shown up in Clone Wars and other things.
