Ive been watching TOS, Next Generation, and Deep Space 9 on netflix. Not sure what I would want. Maybe a Cardassian episode.

There was a Cardassian cameo in Enterprise so yes. When they were first introduced in Next Generation it wasn't a first contact thing like the Ferangi (who were also in Enterprise). It was said they had been at war with them before the series started and when Pecard was a young captain.

In general I would prefer if Trek reinforced already existing aliens instead o making new ones up.

I'm sure there's lots of fan fiction based on the original 5-year mission. Plus the comics.

A Cardassian drink is also mentioned in the '09 film, although that's sort of an alternate continuity.

One era I would have liked to see explored is what happened between movies I and II. While there are some novels and comics set during this era it's kind of overlooked. "fanon" has it that Kirk regained command of the Enterprise for a time before deciding to become an Admiral again, leading to the "desk job" in II and Spock being in command of the ship (Although as a training vessel).
