Biggest issue is going to be the sheer time it would take to go through the zombs, and realistically, getting the human population back to normal will take, cripes, double-digit generations baby booming at a minimum, so however long that's going to take. Maybe you'd want a high-level cleric-type who could actually restore zombies back to life en mass?

If it's just killing the zombies, theoretically, Adam Destine could do it, though it would take him years and years of tearing zombies apart with whatever equipment he could get his hands on. He only has human level strength, but he is completely indestructible, so even if he got completely dogpiled under a swarm, he could eventually dig his way out and resume the fight.
Assuming there's enough humanity left, he probably would have the sheer breadth of knowledge to help get civilization back on it's feet seeing as he's traveled the world, and eventually the cosmos, for nearly a thousand years. I'm not sure if he'd actually be a good leader, but he'd probably do well enough to get things running.
