Default Pacific Rim vs. Monsterverse Kong

1 on 1 matches between Kong and all notable Kaiju and Jaegers. All fights take place in Hong Kong. Kong gets his axe - it starts with a full charge that lasts 2 minutes.

How does he do? Who does he beat? Who is too tough?

Too fast, big, strong. He makes quick work of all of the Jaegars, especially with his axe powered.

Kong mops the floor with most Pacific Rim Kaiju and Jaegers. But there are a few notable exceptions that would be extravagant fights.

    Kong vs. Knifehead

This is Kong's fight to lose; however, Knifehead is a brute with a big-ass knife for a head (hence the name), and Kong can't afford to let his guard down for a second. It'd be a fun fight, with Kong winning 9/10.

    Kong vs. Otachi

Arguably the most exciting fight. Otachi is one of those kaiju who, when in doubt, keep hitting it with fire. Otachi is as cunning as she is lethal, so while Kong is my pick to win, he will have his hands full. Kong wins 9/10.

    Kong vs. Striker Eureka

Striker Eureka remains one of the most formidable Jaegers in the series. It went toe-to-toe against Slattern (more on her in a second), nearly amputating the former's arms. Kong wins 8/10, but that's because he will know right from the start he needs to go all-out.

Although if you spot Striker Eureka the nuclear warhead...

    Kong vs. Gipsy Avenger/Obsidian Fury

It'd be more exciting to watch Kong take on both, but GA and OF are here because they're near equals. They're meant to be upgraded versions of Striker Eureka, so Kong knows he has a fight on his hands but still wins 8/10.

    Kong vs. Slattern

While Slattern and Striker Eureka are equals (with the latter barely edging out the former), Slattern is better suited to dealing with Kong. Even with his axe, Kong is facing an adversary that is his physical peer and is far more durable. What makes Slattern deadly in close-quarters combat is she has several ways of simultaneously wounding you. Slattern's damage soak is also noteworthy, too. It's a damn good fight, with Kong winning 6/10 because he can weather the damage long enough to make Slattern seriously regret it.

    Kong vs. Mega-Kaiju

OK, Kong finally loses. Mega-Kaiju is a physical juggernaut, with the shockwaves from his punches knocking over Jaegers. Then there's the fact Mega-Kaiju is equipped with the means of ripping Jaegers apart like tissue paper. Kong's more durable than any Jaeger, but he's not shrugging off direct hits from Mega-Kaiju's stabbing tails. Additionally, Mega-Kaiju absorbs kinetic energy, which will negate everything Kong does.

Kong is facing off against a kaiju whose baseline strength surpasses his own by a decent margin -- and everything Kong does will only make his opponent stronger. Mega-Kaiju wins 6/10.

Then the Kaiju would be best served by taking the fight into the water if they can.

I don't know if Kong sweeps or not (it's been a while since I watched the PR movies) but my first thought when I read the OP is that this scenario basically turns Kong into a monster martial artist: fighting in HK like he did against Godzilla allows him to distract his foes with an entire landscape of illuminated buildings, and having a charged axe from the get-go means he already has his ultimate move ready to go. Depending on what Kong is supposed to know about his foes at fight start (he already knew sign language while hiding that from the scientist that taught it to him) I feel he'd go for a hell of a neck stab as soon as any fight started.
