Depending on the version of Mr Hyde (he varies A LOT), if it’s a top-end version he gets into fights with Thor and doesn’t die, plays a significant role in putting Hercules in a coma, and has Piledriver of the Wrecking Crew (another person who gets into fights with Thor, albeit not alone) absolutely terrified of what Hyde would do to him.

Jack Russell wants none of that.

Werewolf by Night can take a lot of damage and regenerate from it, but can still be knocked out by blunt force trauma to the head.

As said by probably everybody, depends on the version of Hyde. But, going even with what I think of as default Hyde, which is his early Thor appearances, and even considering that Thor is mostly holding back, Hyde makes a show of it. When Thor absolutely has to beat him within one minute, it still takes the whole minute.

Meanwhile, WbyN gets beaten by Dracula while Drac is not using any of his esoteric powers, just pure strength. There are ordinary humans who have managed to kick Russell in the head enough to stun him and that's not a rare event.

So, Hyde wins fairly handily.
