At least regarding Bambi, deers have been used in horror movies as subversion because it's an animal associated with being wholesome or harmless. There's the laughing deer head in Evil Dead II, the zombified deer in James Gunn's Slither, the (not monstrous but threatening) deer scene in Eli Roth's Cabin Fever, and a disturbing deer scene in Lars von Trier's Antichrist.
