Her feet and moves are quite balletic due to a lifetime of ninja training. When she fights, think of her moving poetically as though she’s performing a deadly ballet. She was described as ‘poetry in motion’ for a reason.

Wolverine recognising Betsy's face made sense as per Claremont's canon that the Hand had modified Betsy's features to make her look Asian - but I believe Nicieza later retconned this moment as this being Kwannon in Betsy's original body attacking Logan?

Not just Asian but Chinese. She wasn't Japanese until Nicieza, another fact he got wrong. Chinese made more sense because the Mandarin would never have had a Japanese woman serve as his right hand, for the same reason The Hand had to use their magic on Betsy to make her look Chinese/Asian because a western woman wouldn't be allowed in that role either.
I think Nicieza only remembered The Hand and assumed Betsy was supposed to be Japanese based on them.

Don't forget the Kwannon is a trained ninja, and as such, she'd have to be on her toes often if she's to fight/flight, or sneak around.
