    Check out Kagan McLeod's Infinite Kung Fu.



    It started as a small press book and had a half dozen or so issues, then was finished as a massive GN from Top Shelf.

    Hopefully this counts, but my next choice would be the legendary Stan Sakai classic...

    It never got finished, because it's Crossgen, but the Path was a really good samurai comic. The Way of the Rat was a decent martial arts comic from Crossgen as well.
