After reading the Miller/Janson Daredevil omnibus for the first time this week, I'm now also hoping for reprints of either the DD Companion, or the Elektra omnibus.
Alan Grant's Detective Comics and Batman, in whatever format, just collect it, please! It would be great if they didn't leave any issues out, but seeing what happened with the Moench-Kelly books...
I'd also like to see more writer centered collections. A Denny O'neil Batman & Detective, for example. They usually cripple storylines just because the usual artist wasn't in that issue, and I hate that.
Stern Avengers Omnibus...but I'm good with the fat TPBs they've released.
A pre-"Parndoned" proto-Epic of Bill Mantlo's Hulk, covering issues #245-268. C'mon...it's almost done!
Gru Cap Omnibus. I loved the "Cap No More" trade, just gimme one that covers stuff before it and I'm good.
Byrne Alpha Flight omnibus.
Al Milgrom Hulk Epic -- bridge the gap between Byrne and PAD's run. Then you've got a solid collection of issues from #269 until #396. (and a recoloring of the Hulk's skin from Annual #15 please!)
PAD Hulk omnibus. Seriously, Marvel...

Irredeemable omnibus by Moore (split in 2 or 1 with a great binding)
