New X-men Reader

So I want to pick up some X-Men omnibuses, but I have no idea where to start. Uncanny? Ultimate? X-men (New X-men)? And that's just off the top of my head. It's all so confusing. The X-men books run so deep. I'm not a continuity nut, I don't need to read everything that has to do with every mutant ever. But I do want to get some kind of feel for the continuity without going all the way to the BFE of all the x-men comics. Just looking for some of the best story's/runs.

All of them seem interesting. Magneto, Jean, Wolverine, Cyclops, and Deadpool. X-Force looks cool too...
