It would be nice to have an enemy in the movies use a fencing fighting style, with a cortosis grip and all. Would really be using the sabers lack of weight to it's full potential.

Would agree on that. But it's not a visually appealing style compared to Kung Fu Kombat!, I suppose.

I would prefer it, myself.

I will note that sometimes the weight and balance point of a sword are there for a reason, and the fighting methodology is based around that (Chinese swords and broadswords are a good example of this), but as you note, that shouldn't apply to a lightsaber.

I mean, Lightsaber fights should really just be "who can keep the other's saber off with force flicks, the longest".

So I started reading Jagaaaaan and holy shit what a horrifying, surreal, brilliant piece of work this is.

Awesome art, huge amounts of body horror, surrealist nihilism.

Not for under 18s as there's a lot of problematic stuff involving women and issues of consent but it's a very well done series.
