I would love to see animated X-men movies, kind of like what DC does with Batman and Justice League. They could be done more catered to adults. As far as an animated series, something that represents the times seems fitting. As much as I hate to say it, an Inhumans vs. X-men war would be a great in an animated series. Set years after the tragic "deaths" of Jean Grey, Xavior, and Wolverine (they died on a mission), the terrigen mists convert humans into Inhumans but are deadly to mutants and adult Cyclops is one of the first victims to fall. In an effort to find a cure, Beast travels to the past to get his younger self to assist him, but causes a tear in the fabric of time and accidentally brings the 05 from the past into the present, Old Man Logan from the future, and Rachel Grey from another time to the present permanently. Storm takes over leadership of the X-men force, while Emma becomes the headmistress of the school and becomes young Jean Grey's personal mentor. Old Man Logan's refusal to embrace his former identity drives Laura to become the new Wolverine. Other key characters featured would be Nightcrawler, Psylocke and Archangel, Colossus, Magic, an infected Rogue, Kitty, and Colossus. The time rift could also explain a possible future story arch involving AOA. This series would focus on the x-men from different times and how the deal with adapting to not only the present, but also to the terrine mist threat. I dunno, that just seams to be in line with the direction Marvel is going.
This is just regarding one character but . . .
If Jubilee were to be in it, how about making her not be the wide-eyed, innocent young ingenue of the team? Instead, how about having her be a troubled young orphan/runaway who's already been on her own for a while. Give her the famous "attitude" she had back in the '90s comics. Make her a bit difficult to deal with this time around.
