Boromir has pretty good chances. Remember that LOTR heroes fought Orcs, and Boromir has fought Uruk-Hai before plenty of times, and killed them even when outnumbered. The average Uruk-Hai is somewhat Mountain-like in size and strength, though probably not in skill.
I'm not going to say 100% of the time, since battles with human, non-powered characters always suffer from the rule of war: Anyone can die. Anything can happen. But, probably Boromir the majority of the time.
I don`t remember the Uruk-Hai having feats like one-hit chopping off horse-heads or literally squishing a human skull.The average Uruk-Hai is somewhat Mountain-like in size and strength
