I never got as much personality from Kent in the comics I've read.

On a serious note, I can't really answer that. It's subjective. There's no right or wrong answer, no matter what people on here have you believe. Hector Hall and Kent V. Nelson were my favorites.
Even though, I like Kent Nelson. Original doesn't necessarily mean the best.

I'm was really just looking for recommendations of which Fate's to read. Reading the wikias about each though, nearly all of them have met with nasty ends. Like to the point where it's really mean spirited. I'd like to have a good time with the Fates before they get the axe.
Only two I'm really familiar with are Kent Nelson and Khalid Ben-Hassin, and perhaps a passing knowledge of Hector Hall. Hard to say my favorite is but it would be between Kent and Khalid.
Personally I would like to see Constantine get the helmet since he's an actual mage and wouldn't be entirely, if even remotely, dependent on Nabu for magic like most of the other iterations of Fate have been.
Kent Nelson, can rarely go wrong with the original formula.
(Also the only one I am familiar with)
How did I miss this threat
Kent Nelson is easily the BEST holder of Doctor Fate
I also miss the philosophical discussions between two of DC's magical greats ...
Dick Grayson in Flashpoint.
With Kent Nelson's return as the primary Doctor Fate for Rebirth and Levitz's Dr Fate still going on, I think both are calls to be excited.
I really hope Fate gets a TV or movie treatment in the near future.
