Tough choice but probably his cameo in the first Amazing Spider-man.

Probably The Incredible Hulk.
And the one in Winter Soldier.
Basically I like the ones where he isn't guffawing at the camera and breaking any sense of immersion into the story I was having.

My favorite is animated Stan Lee during the credits in Big Hero 6. He kind of has two cameos in that movie, if you count the portrait of him when Fred is showing off his house to the gang.
