Alan Moore will come out of exile to write one of the shorts for AC1000.
The rest will be filled in by Morrison, Snyder, Jurgens, Johns and Tomasi.

I'd like a ton of little stories in it from various folks though.

It'll most likely be like Geoff Johns and Dan Jurgens and others akin. It's far too close to us now for anything good to come from it. Superman comics are at a really, really low point in terms of relevance and creativity.
Right, because the last 5-6 years outside of Morrison's work on the character have been so relevant and creative.

Moore wouldn't work with DC for any amount of money, especially in light of Rebirth. I also don't want him anywhere near Superman after the abomination that is WHTTMoT.

I'm going with the popular choice of Grant Morrison, if we have to pick just one. The guy just loves Superman. He's a walking encyclopedia of Superman lore. He's also written some of the all time best Superman stories. A guy with that much love and knowledge just can't be passed up.

There's probably a lot of Curt Swan art floating around that they could use for the issue. But if they want an artist who can draw in the Swan style, then I'd like Jeff Weigel to contribute something. He swans with the best of them.
