Did he do it in a way substantially different than how every street leveler without superspeed does it, ie: by dodging the aim rather than explicitly (and consistently) dodging/intercepting the bullets themselves after they've been fired?

Because, in addition to precisely deflecting bullets with a billy club on many occasions towards a specific target of his choice (a goal which couldn't be achieved by simply dodging the bullet, and is, in fact, significantly more impressive than just dodging a bullet after its been fired), DD has done things like dodging a sniper round already en route to his head before he stayed moving.

I can help. Aim Dodging is evading the aim, running and ducking behind cover faster than the enemy can track. It's what, say, Batman does. Bullet Timing is sidestepping the bullet after it's been fired. Like, say, Cassandra Cain. Or Wesker if you would like a video.
