Ufff, it's very difficult to choose only one. I just may say that my tastes seem to differ so much to most of previous posters.
Some of my favourites:
Punk mohawk Storm is my Storm forever and ever. She got to wear (relatively) measured civvies as if they were the coolest disguise.
For similar reasons, I love Rogue in her most minimalist look:
But I think the most long-lasting and hardly improvable design is that of Nightcrawler, so simple and beautiful at the same time. Besides, these clothes have got a meaning: they're his former job as a trapeze artist costume --they're part of himself. I think the original design only allows little additions like these:
Finally, I've got a soft spot for team costumes such as of The (former) New Mutants, Jim Lee's reboot or Ultimate X-Men. I like their look as a group but with customised details.
Why, it seems I really got something for black, hahaha!

I could talk about X-23 in X Force but that's already been praised a couple of times so I'll go with Jubilee in Generation X. She had some pretty cool uniforms and outfits in that series.
Honorable mention for Surge in New X Men i loved her baggy jeans with the X Men symbol on them.

Best Wolverine EVER is the brown-and-tan look. Psylocke and Gambit looked pretty darned cool, too, although I thought Gambit's boots were prosthetic legs at first.

I always liked Rogue's costume from the Blue/Gold Era and 90's cartoon. That version of Rogue was always my favorite iteration of the character.
