Agree somewhat, especially if Starlin or someone like that is writing him. There are incarnations of Thanos historically that seemed a bit beyond the level of Earth's most mightiest heroes even without the Cosmic Cube, IG or other end-game devices. But there are just as many stories that show him far weaker than that.

That said, there has to be a reason why the Eternals never dealt with Thanos once and for all. Even with a Prime Eternal and other Eternals whose abilities are at the top of the Eternal scale in some categories, Thanos always seems to eclipse them all. I feel like Thanos has to be powerful enough to present a threat to the multiverse and anyone in it. Not just intellectually, but raw, brute, cosmic force. If not, he falls flat and no one would really fear him.

Well, yes, the whys and wherefores differ, but the end result is always the same. The Molecule Man is the only person that I can think of right now who hasn't fallen into that trope. I shudder to think what the multiverse would look like if Doom or Thanos kept nigh-omnipotence over the span of years and decades.

Given how young he was when Death started looking into him, isn't he just the universe's most sympathetic grooming victim?

He is a mutated and enhanced Eternal. So I would say he has their power set but amplified and I think that’s a good explanation and makes sense. Instead of him being invincible on paper but still losing when they want…

Nah! grooming normally entails buying affection through gift giving and offering special attention to make the child feel indebted - Mistress Death hardly ever did any of that. So no, Thanos was a Titan in love

Apparently having the powers of the Beyonders is superior to Thanos (and a writer that favors one character over the other )

Does Doom siphon powers? I think something like that in the second Fantastic Four movie.

I think it's safe to say, his powers and limits are a bit undefined. I can read the Marvel wikia all day, but that doesn't necessarily mean it is consistent. It would seem that Thanos is simply a cosmic level Macguffin or foil to whatever hero or story the writer wants to tell. Perhaps the least, best defined power set in Marvel?
