I assumed he took off the helmet to tell Sophie in private instead of talking, but he could be "thinking" out loud. I think that Kurt woulnd't be happy with it though.

Well Five Cuckoos might be able to shield at least superficial thoughts. If they wanted to probe, they'd probably be able to hear it but I don't think they'd go all out on them.

And Charles might be probably part of the telepathic convo since he and Magneto are on the same side most of the time.
