ROTJ's Battle of Endor had some pausing to see some of the obscure background ships thrown into the battle or the small Easter eggs like the shoe.

A lot of anime crowd scenes early on tended to feature easter egg characters. Lupin and his cast appear in a few crowd scenes themselves in other productions.
Bulma from Dragonball first appeared in Uresei Yatsura's third movie before the actual anime.

Think the main changes the movie edition made apart from re-arranging some scenes and the soundtrack is the scene of Heero and the damaged WZ underwater, some more Tallgeese III and adding Dorothy, giving her some more redemption like with Zechs.

There's certainly a share of paused scenes from Transformers the movie from fans trying to find all the dead Transformers (or Transformers that are *supposed* to be dead but show up later in crowd scenes anyway).
There's also a bizarre moment where Ultra Magnus puts the Matrix in, then seems to take it out and put it in again for some reason. Not exactly a "pause" scene though.

Not cinema but on tv I always pause the Battle of Wolf 359 scenes. As well as the battle in the DS9 Dominion War scenes so I can see the different classes of ships.

Yeah it's kind of cool what they did, a lot of the background ships are kitbashes using model kits or toys (Star Wars used the same technique for the Death Star surface).
