Hmm. I didn't know BP became an X-Man...
Let the flames destroy all but that which is pure and true!
Cyclops battling Apocalypse and having to send Nathan into the future in X-Factor vol. 1 #68. Claremont narrated the issue from Scott's perspective, taking us through his thoughts and feelings--his love for Jean, his regrets over Madelyne, his turmoil over having to make an emotionally impossible decision to save his son, and his outward strength and stoicism throughout the entire event. It made Scott tragic, heroic, and sympathetic all at the same time. It also made him seem very adult--a man who'd lived enough to have accumulated some serious mileage. As someone who prefers his protagonists competent, honorable, and tough, but weathered and weary, I loved that.
Lot of great choices in this thread !
For me, I love this scene from Uncanny X-Men 251 :
This one from Uncanny X-Men 297 :
And finally, it might not be my favorite but I don't know seeing two of my favorite X-Men just drinking beer and giving a toast to one of my favorite X-Woman after the mess they went through in recent years was bittersweet :
Such is the way of the X-Office in recent years unfortunately but I still like this moment I mean judging by your avatar you must be a fan of Laura, just look at what happened to her when All New Wolverine and All New X-Men were being released at the same time, she was her own person in one serie and a parody of Logan in the other, that's the same thing lol.

Oddly enough they're from New Xmen.

Emma does what it takes to take care of her students and beneath that icey exterior she does have a heart
Well, that's three questions, and they might not have the same answer.
As for my favorite character, I think his most powerful moment took place right in the very second of his 'birth', although it had nothing to do with breaking skulls nor kicking ass. Quite the contrary, he was completely defenseless and under ruling class' power. But his spirit hit hard with just four simple words:
NO.
ONE.
OWNS.
ME.
There they have it, those who consider Longshot a dumb bufoon, forgetting about a background that compites in horror and toughness with Wolverine's. Unsubmissiveness is, too, a very defining trait of his persona.
Now, what is the moment that turned him into my favourite? Why, it didn't take long, TBH, but probably it was as far as page 5 of #1, precisely when Longshot looks so vulnerable and lost and weird (or is it our world which is weird?) that he seems sick.
Some panels later his response is cracking up. How could I not love him?
